MELBOURNE | Akimbo Bakery is Lindsay Oates’ one man business, and sees the experienced Melbourne chef and baker (Medlar Dining, Loafer Bread) turn his efforts to producing small scale, slow fermented, naturally leavened bread.
It’s a the natural progression of Lindsay’s evolving passion for baking and fermentation, and the idea of growing, crafting, and selling food from home, using the best quality local produce.
Each week, a small selection of baked goods goes up on the Akimbo website. There’s one of the best loaves of traditional sourdough you’ll find in Melbourne, along with things like rotating flavours of cookies, and fougasse, a type of bread typically associated with Provence, similar to Italian foccacia.
Currently, pre-orders made on the website can be picked up from your choice of either Little Tienda Thorbury or Theodore’s Brunswick, on Fridays and Saturdays.
