MELBOURNE | A new bakery and patisserie, AM Bakehouse, has opened up in Glen Iris, and it’s already proving popular with locals, who are loving the delicious baked goods and friendly service of owners Matteo and Adrianna.
The duo, both experienced bakers and pastry chefs, have several years of working in restaurants across Melbourne under their belts. The thought of opening a space of their own, coupled with circumstance and timing early this year, resulted in AM Bakehouse coming to fruition. The duo recently invited me in to their new space to take a look.
It’s a deceptively large space, just a few minutes walk up the road from Tooronga train station. At the front, a long display counter showcases the day’s offering, with full view of the bakery behind. As you can probably guess from the size of the bakery in the video, Matteo and Adrianna have been getting to know the people behind the area’s cafes and restaurants, and supply several of them with their bakery needs.
There’s croissants, other viennoiserie, doughnuts, buns, and more, all made using sustainability sourced local ingredients where possible. Flavours are informed by the seasons, as well as the classics. If it’s something savoury you’re after, there’s sourdough loves and baguettes, sausage rolls, fougasse and focaccia.
I tried several things, and was a fan of the lot. The apple pie croissant, already a customer favourite, is a must try, as is the wonderfully addictive focaccia.
Being new, Adrianna and Matteo are trying new things, seeing what works, and what their regulars are liking and requesting. Focaccia sandwiches are a recent addition, filled with assorted fresh ingredients, like fior di latte, tomato, and rocket.
To drink, it’s great espresso based coffees pulled from the La Marzocco machine with Code Black beans, and a small selection of tea and craft sodas.
From the street, AM Bakehouse is an easy place to miss, but make sure you don’t walk straight past. This is one place you’ll definitely want to pop into for some treats to enjoy then and there, and more to take home.
