CHICAGO | Birrieria Zaragoza is a family run hole in the wall Mexican joint in Archer Heights that serves what many consider to be the best roasted goat in Chicago. Goat isn’t exactly the most common meat choice when it comes to dining in Chicago, but one mouthful of the flavoursome, tender goat at Birrieria Zaragoza will have you hooked.

The restaurant was started in 2007 a few years after Human Resources manager Juan Zaragoza decided to quit his day job and focus on perfecting and serving up the birria he enjoyed in his hometown of La Barca in the Mexican state of Jalisco.

A lot of effort goes into making the perfect roasted goat at Birrieria Zaragoza. Grass fed goats are sourced from a farm in Woodstock, Illinois, and butchered on site. The meat is then rubbed with salt and steamed for around five hours, after which it’s marinated in an ancho-based red mole, mixed with lard, and roasted in a gas oven. Finally it’s topped with a tomato-based consomme and then it’s ready to eat. The result is quite simply outstanding – tender, rich, flavoursome meat with a flecks of crispiness on the exterior.

You can order the goat by the plate, bone in or out, or as tacos and quesadillas. There’s a trip taco option too, and you can purchase goat by the pound to take home with you. Tortillas are made fresh on site each day, as is the addictive salsa molcajete, a bright red concoction made by grinding fire roasted arbol chilis, tomato and garlic in a mortar and pestle.

Service is friendly, and it’s clear to see that Juan and his family and other staff really have a passion and love for what they are doing. A must visit for anyone in Chicago.
