SANTIAGO | Chipe Libre is the place to visit in Santiago if you want to explore the world of pisco. Located in Santiago’s Lastarria neighbourhood, the self proclaimed “republic of pisco” offers over 100 piscos from Chile and Peru. The venue has a relaxed feel about it, with checkered floors, wooden tables, high ceilings, and long glowing green bar. Out the back is a spacious patio which gets very popular during peak hours.
You can enjoy your pisco straight, with ice, or in a variety of pisco based cocktails, including pisco sours and more. Tasting flights are offered which give you three piscos to compare and contrast. There are other spirits on offer too, but pisco is the reason to come here. The staff here are very knowledgeable, and will happily talk you through what’s on offer and help you find the right pisco for you.
If you’re hungry, the food at Chipe Libre is very good. Like the pisco, the food menu draws upon the flavours of Chile and Peru. Think things like steak sandwiches, lomo saltado, and ceviche. The steak sandwich is highly recommended, with perfectly cooked, tender, flavoursome strips of steak, cheese, and grilled onions in a large roll.
