PERTH | FOUND. have opened their new brewpub, FOUND. Subiaco, in the former Golden West site on Hay Street. After six months of renovations it’s a modern, 350 capacity venue that showcases the space’s heritage, and makes good use of natural Western Australian materials and a rural inspired colour palette.
Inside, there’s there brewery itself, an an airy space with a long bar. Outside, it’s a large patio opening out onto Hay Street, with a retractable transparent roof to provide reprieve from the heat.
On tap, you’ll find 24 taps featuring Found’s core range beers, and a rotating selection of seasonal and experimental beers. From the core range, the Crush, a 4.0% ABV fruit sour, is a great option, with notes of watermelon, strawberry, and lime. Strong, Found’s 5.8% ABV West Coast style Pale Ale, is also great, with tropical notes. On the rotating taps, you might find beers brewed with interesting adjuncts, or the same base beer brewed with different hops on each tap.
If you’re not into beer, there’s still a lot on offer. There’s around 70 bottles of quality wine, 14 of which are available by the glass. There’s also a great selection of spirits and cocktails, and several non-alcoholic options.
For food, head chef Ian Macintosh, who you may know from his time at Long Chim and Phat Brewing Club, has put together a menu of pub classics and globally inspired fare. Think oxtail doughnuts with pickled jalapeno, and apricot glaze; a double smash patty cheeseburger; abrolhos scallops with gochujang butter, and salmon roe; and an assortment of New York-style pizzas made using Ian’s 72 hour slow ferment dough.
