CANBERRA | Hippo Co is a whisky bar in Canberra that ticks a lot of the right boxes. If you’ve been to Sydney’s Baxter Inn before the place will look very familiar. In fact when we first walked inside, we thought that it might be owned by the same people behind Baxter Inn (it’s not). The lighting is low, there’s taxidermy on the walls, and there’s a speakeasy feel about the exposed brick venue (it’s hidden above a Chinese restaurant). In another familiar touch, featured whiskeys are listed in gold letters on a black board behind the bar.
Whisky is the main reason to come here, and visitors will find over 250 bottles of the good stuff from all over the world. From common to rare drops, there’s bound to be something that suits your mood, and the knowledgeable staff will happily talk you through the whiskey list if you need some assistance. Cocktails are great, and feature a mixture of classics and modern takes on the classics. They’re listed under either Sweet, Sour, Refreshing and Stirred to make things easier. Wine and beer drinkers will also be happy with the quality on offer – try one of the suggested boilermakers if you want to see how whisky and beer can be paired, or visit for one of the three weekly whisky tasting sessions.
