SAN DIEGO | The Noble Experiment East Village is one of the best cocktail bars in San Diego, but you’ll have to make the effort to find it before you’re rewarded with what’s inside. Go to the Restaurant ‘The Neighbourhood’. The restaurant is closed in the evening, but the door to the side is open. Walk through the door, down the side of the restaurant and through a dark passage and there’s a pile of kegs. Only they’re not kegs, they’re a door to the Noble Experiment.
The venue is dark and opulent – think Parisian catacombs meets old French manor, skulls, spooky paintings, chandeliers and all. This is a cocktail bar that takes its drinks very seriously. All the spirits are top shelf, juices are made to order, and garnishes are as fresh as it gets. Even the ice, which is hand cut, is a work of art.
The cocktail menu contains an assortment of classics (the old fashioned here is fantastic) along with some of the bar’s bespoke creations. Our suggestion is to go for the ‘Dealer’s Choice’ and leave things in the capable hands of your bartender. You’ll be asked a few questions and before long will be drinking the exact right cocktail for you.
There’s no kitchen at the Noble Experiment, but if you arrive early enough in the evening you can grab a bite at The Neighbourhood before heading in for a drink.
During quiet nights (early in the week) you might be able to get in without a booking, but if you want to visit later on in the week, particularly on Friday and Saturday nights, calling a few days in advance is strongly recommended.
