SYDNEY | Taking its name from the taxidermy business that used to be housed in this site, Merrivale speakeasy Palmer & Co. spares no costs when it comes to creating the prohibition-era 1920s atmosphere it’s going for. It’s all exposed bricks, wood, iron and tile here, with soft yellow old fashioned lighting to complete the look. Even the glassware and tableware fits in with the era.
Top quality drinks is what Palmer & Co. is all about, and there are over 30 gins, 80 whiskies, and 40 tequilas and absinthes on offer. There are also 26 different kinds of Champagne on offer. The spirits, like the staff, come from all over the world and many of them are so rare that you won’t find them elsewhere in Sydney. If you need help with deciding what to drink, the very knowledgeable staff will lead you in the right direction. For us one of the signature cocktails, the “Smoked on the Water”, a mixture of Chivas Regal 12yo whisky, pineapple, magic citrus, and sparkling coconut water, always hits the spot.
Food isn’t the main focus here, but what’s on offer is very good – think charcuterie boards, meatballs, mac & cheese and pastrami.
All up Palmer & Co. is a great spot to while away the hours of an entire night, or for a pre-meal drink before heading to dinner at Mr. Wong, which is connected to Palmer & Co. by a doorway.
