MEDELLIN | Pergamino Coffee is one of the pioneers in bringing quality coffee to locals and visitors in Medellin. You might be wondering how Colombians couldn’t get good coffee, given quality of beans in the country, but for a long time, all of the best stuff was exported, and Colombians were left with the poor quality beans.

Pergamino is the Spanish word for “parchment”, the outer shell that protects green coffee beans. The cafe was opened in 2012 by Pedro Echaverria, a local who studied business the USA, and whose father was a coffee producer (Santa Barbara coffee estate) with over 35 years experience. Today there are four Pergamino cafes across town (including one at Jose Maria Cordova Airport), and beans can be ordered retail within both Colombia and the USA.

Pergamino work directly with over 300 producers across Colombia, many in regions that have been hard hit by drug-fulled violence in the past. They work to improve the technology and production techniques in those areas, and pay growers a fair price for their beans. The result is an increase in living standards for producers and better coffee for consumers.

The cafe is bright, modern and welcoming, with lots of light timber and white walls, booths, and tables. It’s very modern and reminiscent of third wave cafes around the world – there’s merch, slick branding, and free WiFi. The cafe opens up to a decent sized patio at the front where you can enjoy your coffee and watch the world pass by.

Coffee wise, you’re spoiled for choice. There’s an assortment of Colombian single origins and blends, highlighting the best beans from across the country, along with the occasional rotating imported bean, from places like Ethiopia and Kenya. Brewing wise, all of the popular methods are available – espresso, cold drip, pour over, Chemex, Aeropress and more.

Each coffee comes with an information card, which gives you some information about the people behind the farm that the bean is sourced from. Their Finca Inza blend is particularly fantastic, with notes of black tea, lemon, and clove. The iced cascara is also great. For food, its a selection of baked items and pastries.

Pergamino is considered by many to serve the best coffee in Medellin, and when you drink it it’s easy to see why. We enjoyed the coffee so much that we went back several times, and even bought some beans to take back home with us.
