MELBOURNE | Promise Bar is a small bar hidden behind Promise Cafe on High Street. Walk through the back door with the ‘Staff Only’ sign above it, and you’re transported from the light and breezy cafe into a speakeasy style drinking den with skull motifs, leadlight windows, dark wood furniture and candlelight.

There’s no drinks menu at Promise, you’re simply handed a card on arrival that gives you some choices in three categories. Light, dark or both, type of spirit/s, and flavour profile – sweet, sour, savoury etc. There’s also a section to specify anything that you don’t want in your cocktail. Make your choice, hand the card to the bartender, and you’ll soon be sipping a delicious cocktail that’s exactly what you wanted.

There’s a good range of spirits and ingredients behind the bar, and much of what’s used is made on site where possible – powders, dehydrated fruits, syrups, juices etc. When we visited we had a group of eight people and everyone was very impressed with their customised cocktails. Service is friendly and chatty, and the place has a great vibe with a prime set up for casual conversation and easing into the night.

For hungry folk, at the moment it’s just a handful of toasties on the menu, but plans are for a more substantial food offering in the near future.
