HOBART | Shambles Brewery is one of the newest of Hobart’s inner city breweries, founded in 2016 by home brewers Cornel Ianculovici and Bruce Arnold, and their friends Adrian Ianculovici and Nick Blacklow. The name comes from the brewery’s site – the warehouse was previously occupied by Mundy’s Butchers, and the word shambles referred to meat markets in Medieval England.

The space is large. There’s a bar out the front with lots of communal seating, with a few extra seats and table out front. Walk towards the back, where the brewing equipment is, and there’s an even larger space complete with a fire pit and table tennis table. The beers cover a wide range of styles, from sessionable brews to more experimental and niche beers. We love the Dances With Hops, a 6.4% American IPA with five different hops, and the Cool Runnings, a 6.8% Coffee Stout infused with cold-brewed, single-origin coffee and cascara (the fruit of the coffee bean that’s usually discarded) from local roasters Zimmah Coffee.

Tasting paddles are available if you want to try smaller pours of a few things, and if you want to take beer home, you can also purchase growlers and growler refills at the brewery. For those who don’t want beer, there’s a decent selection of Tasmanian wine, cider and spirits on offer.

The food at Shambles is no afterthought, and is equally as thought out as the beers. Chef Patrick Anderson sources meat from Mundy’s and local markets to create tasty dishes like maple glazed pork ribs, Portuguese chicken wings, waffled mac & cheese, and a rump steak sandwich.
