MELBOURNE | The Everleigh Fiztroy is not only one of the best bars in Australia, it’s also appeared on the World’s Best Bars list during its life. What is it that makes the Everleigh so special? It’s all about having a vision and getting all of the little things right. It’s a speakeasy style bar, a little bit hidden in true Melbourne style (it’s above Belle’s Hot Chicken), and walking up the stairs into the bar feels like stepping back in time. It’s all low lighting, wooden furnishings, a long marble bar and old fashioned bric-a-brac in this ode to a time long passed.

When you reach your seat, the bartender will ask you what you want. You can choose something from the menu of course, which, much like the furnishings, harks back to an older, golden age of cocktails, but the best thing to do is to go for “The Bartender’s Choice”. The bartender will have a chat to you about what you like and don’t like – spirits, other cocktails, flavours etc. The bartender takes this info and makes up a cocktail on the spot, which turns out to be exactly what you want without you even realising.

There’s attention to detail with everything here. The ice is produced by the Everleigh’s own ice company, and juices are freshly squeezed with each order. There are wines and beers on offer here, but the cocktails are why everyone comes to the Everleigh. You should too.
