CAIRNS | The Grateful Coconut is a stall inside Cairns’ Rusty’s Markets that opened in April 2019 with a simple purpose. That is, to serve healthy coconut bowls to people, using locally sourced coconuts and fresh fruits from fellow market vendors.
Each bowl is made fresh to order, with coconuts cut, drained, and shaved. Then filled with the shaved coconut, fresh fruits like mango, dragonfruit, papaya, and pineapple. Finally it’s topped with coconut yoghurt, cinnamon and, cashews.
A delicious and healthy choice for breakfast if you’re in Cairns, and a great way of sampling the region’s brilliant tropical produce in one bowl.
