RECIPES | Our black truffle infused honey recipe is a great way to use truffle during its very short season. For those who have purchased a Perigord truffle before, they are a little pricey hence you need creative ways to extend the use of this delicious fungi without losing the flavour.
This black truffle infused honey recipe imparts that delicious truffle flavour into honey with the use of only 1g of truffle. The honey can then be used outside truffle season with cheese, fruit or bread.
Preparation Time: 10 minutes / Cooking Time: 10 hours/ Makes 100g
Ingredients
- 100g mild honey
- 1g black truffle
- Sterilized 100g jar
Method
- Place the honey in a heatproof bowl, over a pot of hot water.
- Add the truffle to the honey and heat to 80°C for 10 minutes.
- Remove the honey from the heat and allow it to cool for 10 minutes.
- Transfer the honey to a sterilised jar.
Notes
You can use this truffle honey to make a quick starter dish with cubes of aged cheddar and some toasted slithered almonds. Dip the cheddar in the truffle honey then coated each side with a slithered almond.
