MELBOURNE| BOMBA Tapas Bar & Rooftop is one of our favourite bars in Melbourne, so when we heard it was shutting down earlier this year we were very surprised. Thankfully surprise soon gave way to relief – the shut down was only temporary while the bar underwent a revamp. BOMBA reopened in July this year, and we’re happy to report that the revamp has made the venue even better than before.

Take the elevator up to the rooftop and you’re faced with a space that’s simultaneously familiar and unfamiliar. The bar looks the same, but there are now six beer taps rather than one, in a different part of the bar. Look to the left and things appear to be the same, but look to the right and where there used to be nothing, there’s now a completely new outdoor space with city views and images being projected onto the side wall of Her Majesty’s Theatre.

The revamp means that BOMBA now has enough standing room for 120 people, and the new retractable roof and drop down windows means that the space can be enjoyed year-round, regardless of weather conditions.

The updated beer list features a greater variety of local, independent beers while the wine list features mostly Spanish and Australian wines, also all independent. A fantastic cocktail and spirits list rounds things off.

For food it’s a simpler offering than the full BOMBA menu at the restaurant downstairs, with a variety of pared back, tapas style Spanish dishes. Favourites like Pedro Ximenez–braised pork jowl with cauliflower, succulent lamb ribs with paprika, oregano and lemon, and cheesy manchego croquettes all remain on the menu while a few new additions have also been included. Our favourite are the “bikinis” – next level toasted sandwiches which can be found throughout Barcelona. Think 36 month aged jamon iberico and truffle, confit chicken, pickles and Mahon, and the sweet banana, mascarpone and dulce de leche. Your average toasted sandwiches these are not.

We were never of the opinion that BOMBA needed to change, but somehow it’s managed to become better.
