MELBOURNE | Open during lunch in the bar area of one of Melbourne’s best Italian restaurants, Trattoria Emilia, you’ll find “sandwich” shop Emilietta. It opened earlier this year, focusing on tigelle, a regional food from the Modena area of Emilia-Romagna, where co-owner/chef Francesco Rota is from.

Tigelle (also known as crescentine or crescente) are a round flatbread, usually eaten at home or at traditional restaurants. In recent years, they’ve become popular in Modena as a quick street food, and that’s the angle that Emilietta is taking. Each tigella is made on site, and baked between stone tiles on a custom-made tigelleria (the tigella making machine) imported from Modena. The result is a delight that’s that’s light and airy on the inside, with a crisp shell.

There’s 8 regular fillings available, plus a rotating special. All ingredients are the same local and Italian ingredients that are used in the Trattoria Emilia kitchen. The mini originale is as classic as it gets – cunza (pork lard, rosemary, and garlic spread) with 36 month aged Parmigiano Reggiano. The most popular one, and my favourite, is the Raffinata – 4 month aged prosciutto crudo di Parma Galloni, mixed leaves, Stracciatella, and 24 month aged Parmigiano Reggiano tuille.

If you have a sweet tooth, the mini tola doza (take it easy) tigella combines ricotta cream, Nutella, Ferrero Rocher, and coffee to great effect.

You can grab a tigella to go, or nab one of the few stools on offer. If you’re lucky enough to score a seat at the window, looking out onto laneway and its artwork, watching customers come and go, chatting as they wait for their order, you’ll get the best of Melbourne and Italy in one. Paired with an espresso, Chinotto, or glass of Lambrusco, you can’t go wrong.
