MELBOURNE | Sometimes a new restaurant pops up out of no where, with zero fanfare, and kicks goals from the outset. I noticed Faye when walking home up Lygon Street in Brunswick East. It only opened in a few weeks ago and is already doing a lot of good things.

The modern wine bar/restaurant is from chefs Marcus Dimabuyo and Daniel Naylor, plus winemaker Rhen Dodd, and focuses on natural/miminal intervention wines, and food that veers towards the grilled, offal, veg, and fermented side of things. Totally my kind of thing.

The cherry and chicken heart skewers are wonderful balance of textures, and flavours. A must order. Another great offal dish is Faye’s take on the rustic Italian tripe ragu. The version here combines flavoursome slow hooked trip with grilled octopus and a house made pasta. On the day I visited it was buckwheat maltagliata.

For vege fans, the charred eggplant with black garlic, braised lentils, and Otway shikatke mushrooms is one of the best things on the menu. Also well worth trying is the fig leaf ricotta with heirloom tomatoes, cucumber & grilled endive.

For seafood, the bontio with smoked bay and buttermilk pil pil is a delicate delight.

The deserts are just as interesting as the savoury dishes too. The white balsamic ice-cream with semi dried plums and chocolate is a rich, sweet, tangy wonder, while the flowering gum ice-cream with smoked mango is very interesting, in a good way.
