RECIPES | There’s nothing quite like a hearty lasagna recipe. It’s a favourite comfort food for many people, including us. For our mac & cheese lasagne recipe we use a mac & cheese sauce instead of a classic Béchamel which makes the lasagne very creamy and incredibly delicious. Once you’ve tried our mac & cheese lasagne recipe, you might never be able to go back to a traditional lasagne again!
Preparation Time: 30 minutes / Cooking Time: 5 hours 40 minutes / Serves: 6-8
Ingredients
- 20ml olive oil
- 500g lean beef mince
- 1 brown onion, diced (~125g)
- 4-5 garlic cloves, minced (~15g)
- 690ml jar of passata
- 1g dried oregano
- 1g sweet paprika
- 2g dried basil
- 1g dried parsley
- a pinch of chilli flakes
- 500g dry spaghetti
- 70g grated Monterrey Jack cheese (or Gouda)
- 70g grated cheddar cheese
- 30g Queso Quesadilla cheese (or Mozzarella)
- 30g Asadero cheese (or Provolone)
- 45g unsalted butter
- 60g plain flour
- 450ml full cream milk
- 250g box of instant lasagna sheets
- salt and pepper to taste
Method
- Add 20ml of oil to a medium pot, place on a moderate heat.
- When the oil is hot, add the garlic, onion. Sauté for about 5 minutes until the onion has softened and is translucent. Don’t overdo this step – you don’t want to caramelise the onions.
- Add the mince to the pot, breaking it up and combining it with the onion and garlic. Continue until the mince has browned, about 5 minutes.
- Add the passata, herbs, spices, salt and pepper to the pot and stir.
- Cover the pot and reduce the heat to a low simmer. Allow the bolognaise sauce to simmer for 5 hours, until it’s a thick consistency that’s not too watery.
- As the sauce is nearing completion, melt the butter in a saucepan over a medium heat.
- Add the flour and stir to combine into a ball, cook for 1-2 minutes.
- Add 100ml of milk to the saucepan and stir constantly until all the milk is incorporated.
- Repeat step 9 until all the milk has been added.
- Add the four cheeses to the saucepan and continuously stir until all the cheese has melted.
- Remove from the heat.
- Place a layer of lasagna sheets on the base of a baking dish.
- Add one third of the cheese sauce and top with another layer of lasagna sheets.
- Add a generous portion of meat sauce and place another layer of lasagna sheets on top.
- Repeat step 14.
- Add one third of the cheese sauce and top with another layer of lasagna sheets.
- Finish the lasagna off with the last third of the cheese sauce and bake for 30 minutes at 200°C.
Notes
You can extra cheddar cheese to the top of the lasagna before baking if you like your lasagna extra cheesy.
