MELBOURNE | Cheese lovers of Melbourne rejoice! After operating as a food cart in Prahran Market’s Grand Hall since 2015, cheese maestros Maker & Monger have expanded and now have a much larger, permanent presence inside the market. It’s a rustic yet slick fitout, with a white marble benchtop, American walnut and steel fixtures, brass lights, and green and black tiles.
Favourites from the old menu remain, such as grilled cheese sandwiches inspired by owner and cheese-monger Anthony Femia’s journeys around the world, the Flaming Reuben, and Mac & Cheese. They’re joined by new creations like fondue, a weekly bruschetta made with fresh cheese and produce from other market vendors, a Cubano sandwich, and a seasonal soup.
The selection of farmhouse and artisan cheeses from Australia and abroad has been greatly expanded and can be found inside the impressive seven-metre fridge. All going to plan, a pending liquor license once approved will allow people to enjoy a glass of wine or sparkling with their cheese treats.
As well as serving cheese and cheese creations to enjoy on site or take away, the new Maker & Monger aims to highlight the entire cheese making process from milk to maturation through to the end result. A purpose-built maturation room enables cheese to be aged on site, and gives Femia greater control of the process than before.
