MELBOURNE | The Newmarket Hotel is a St Kilda institution that underwent a metamorphosis in 2011. with the tired old aspects of the pub giving way to something more on trend. 6 Degrees Architects revamped the space, making good use of the building’s bones to create a range of birght and airy indoor and outdoor areas. The menu was updated by Melbourne’s “Mr Fix It” consultant chef Paul Wilson, to tap into the Mexican trend of 2011, with an eye to the future too, being not just Mexican, but rather Southern Californian-Mexican. How have things fared five years on?

The space itself has aged well and still feels fresh, while the style of food has also stood the test of time. The advantage of a menu that focuses on both Mexican and Southern Californian flavours is that influences from across Latin America and Spain can all be used, making things less restrictive than might otherwise be the case. The tacos, which use made in-house masa harina flour tortillas are fantastic while the spicy chorizo really packs a punch with its wood fired peppers. The meat, which is also wood fired, is succulent and full of flavour. Ceviche and inventive salads provide, along with other menu options, something for everyone whether you want a heavy meal or something lighter. There’s also a lot to like for those who want gluten-free and vegetarian/vegan options.

When it comes to drinks, a decent range of wines and spirits are offered along with a decent selection of craft beers across 17 taps. Whether its a full meal or just a few drinks you’re after, The Newmarket Hotel still gets all of the important things right. It’s fun and vibrant, and the food and drinks are top notch.
