The Noble Bootlegger Whisky Needs You

MELBOURNE | The Noble Experiment Collingwood is one of our favourite bars in town, in big part due to the innovative barrel aged cocktails they create and owner Daniel Lemura’s encyclopaedic knowledge of whisky. The team at the Noble Experiment have a real passion for good drinks that goes beyond flavour and extends to really understanding why certain things work at a base component level. We’re such big fans in fact, that we collaborated with them in 2015 to create the Spiced Pear Rum Old Fashioned.

Over the past 3 years, Daniel and the team have been experimenting with barrel ageing a range of whiskies, and have tried several different barrel finishes. This has culminated in a final product, The Noble Bootlegger Single Barrel Finish Single Malt Whisky. They’ve recently launched a Pozible campaign to help raise funds to purchase new barrels, bottles and the base whisky with the aim of being able to produce “The Noble Bootlegger”. Finding the right barrels, bottles and whisky from overseas is expensive, hence the campaign. Paul founded The City Lane back in 2009 as a place to share photos of his travels around Europe with friends and family. The City Lane might have changed quite a lot since those early days but one thing that’s remained constant is Paul’s passion for food, travel and culture, and a desire to photograph and write about his experiences. Paul has a strong inquisitive nature that drives him to look beneath the surface in order to discover what really makes a city and its people tick, and what better way to do this than over a good meal or drink, with a city’s locals, at places that people who live in that city actually frequent. Paul is also a co-host of The Brunswick Beer Collective, a podcast that may or may not actually be about beer.
