MELBOURNE | Proof is in the Pudding is a place we first noticed a while back while scrolling through Instagram. What got our attention were the delectable looking cakes and baked goodies captured fantastically on the thread. City Lane contributor Nicole visited in person, and confirmed that the cakes tasted even better than they looked, and lived up to their reputation of being some of Melbourne’s moistest cakes – no mean feat. We wanted to know more about the person behind the brand, so had a chat to founder, owner, and head baker Isabelle Bach.
In a nutshell, Isabelle hand crafts desserts and savoury treats from the highest quality produce with the aim of creating food with a rich depth of flavour reminiscent of a point in time, place or person. Free range eggs come from Mornington Peninsula while chocolate is Callebaut Belgian Couverture.
Proof is in the Pudding started when Adelaide-based Isabelle moved to Melbourne to dance with the Australian Conservatoire of Ballet. A combination of a hip injury which led to surgery that ended Isabelle’s dancing career, the inability to find a Almond Ganache Torte which came close to her favourite one in Adelaide, and her partner’s encouragement were what it took for Isabelle to try and bake the dessert herself.
Three years later, and Isabelle has a successful business making bespoke cakes, as well as a core range of favourites, out of her own shop in South Yarra. The majority of the business is corporate catering and wholesale, and there’s a good chance you may have unknowingly tried Isabelle’s cakes before. The store itself smells like everything you imagine it does, and there’s a ‘Baker’s Bench’ where you can watch Isabelle and her staff baking cakes in the open kitchen, and of course buy some cakes to take away.
How do you like the sound of the ‘Afternoon Delight’ – a moist chocolate cake with creamy strawberry coconut drip, luscious vanilla bean cream and sparkle dipped strawberry? What about the ‘In Pie We Crust’ – a cinnamon spiced pecan pie baked inside dark chocolate fudge cake, encased in whiskey scented couverture ganache, and topped with caramelised white chocolate spoon, or the ‘Nutella Cheesecake’ – layers of rich Belgian mud cake, layered with creamy vanilla cheesecake, Nutella buttercream, and encased in roasted hazelnuts? Yeah we thought so.
Along with the daily menu, there’s a Dessert Degustation X High Tea on the last Sunday of the month. Reservations are essential, and you get three dessert courses paired with organic sodas, to the sounds of Isabelle’s eclectic playlist.
