PORTLAND | Salt & Straw Portland was launched in 2011 by cousins Kim and Tyler Malek. It began as a food truck but soon after launching the first brick and mortar store opened and today Salt & Straw is considered one of the best ice-cream companies in the USA. They are known for the high quality locally sourced ingredients used in their artistically ice-cream and the exotic flavour combinations that are on offer. These exotic flavours vary depending on seasonality and availability of ingredients, but just a few of the flavours that have made Salt & Straw famous include Bone Marrow with Bourbon Smoked Cherries, Arbequina Olive Oil, Foie S’mores (toasted foie gras marshmallows and smoked vanilla ice cream ribboned with veal chocolate sauce and hazelnut graham cracker crumble) and Pear & Blue Cheese.
When we visited the Nob Hill store we sampled quite a few flavours and were impressed by the simple options (coffee ice-cream that tastes like actual espresso) along with the more exotic flavours we tried. Our favourite was the Pear & Blue cheese, which made our tongues sparkle with delight with its hints of umami, sweet and savoury along with surprising textural complexity. In fact we enjoyed all of the ice-cream we tried so much that we forgot to take photos of it until it was too late!
Salt & Straw’s “farm-to-cone” philosophy ensures that all flavours have a story behind them. Kim and Tyler build relationships with local farmers and producers and work with them to develop the flavours. It’s not just talk – these guys actually care about supporting everybody who is involved in what becomes the final product at a level that’s deeper than most. Great tasting ice-cream from a company with great ethics and philosophy.
