MELBOURNE | The Starward Whisky has come a long way since it was founded by David Vitale over 10 years ago, from distilling in a disused aircraft hanger in Essendon Fields to investment by Diageo in at the end of 2015, and moving to the current premises in Port Melbourne in 2016. The 3,500 square meter former warehouse is completely open, and allows visitors to look at all of the distillation equipment and 2,500 barrels. A space like this could easily feel impersonal, but the large tree, couches, and wood finishing combine with the more industrial features of the venue to make for a welcoming, if not intimate, space.

$10 will allow you to receive a tour of the distillery on Fridays and Saturdays and have a bit of a tasting, but there’s also a fully stocked bar for those who just want to pop in for a drink. On offer is a number of Starward’s whiskys, available in 15 or 30ml pours. Along with the popular Solera and wine cask aged whiskys, there are also a few limited whiskys that are only available at the distillery.

If you don’t want your whisky straight or on the rocks, there’s also a selection of cocktails on offer like the trusty whisky sour and Old Fashioned. Also of note are the collaboration beers that Starward have done with local brewers. The Boatrocker Ramjet Starward Whisky Barrel Aged Imperial Stout, which is released once a year, is fantastic. For food, a limited selection of cheese and charcuterie is available.
