MELBOURNE | Trang Bakery & Cafe is a Vietnamese bakery in Collingwood that sells a small selection of Vietnamese delights, that’s developed somewhat of a cult following for its banh mi. There are a lot of options on the menu, but the two most popular are the special pork roll and the crispy pork roll. Ordering is simple, you choose which roll you want and what kind of bread you want (white or wholemeal). It’s then generously filled with ingredients, with the only additional question being if you’d like chilli or not.
The special pork is tender and marinated, while the crispy pork is cut to order – succulent with a wonderful crackling. The usual addition of pate, mixed veges and herbs along with a signature peanut sauce all combine to make for a very tasty roll. The only real criticism is that the rolls that Trang Bakery use are quite soft – those looking for the more traditional crunchy, flaky exterior might be disappointed. Also the peanut sauce, while extremely tasty, may also disappoint purists.
Bread and peanut sauce aside, the thing that really makes Trang Bakery stand out from the competition is their substantial vegan options. That’s right, vegans can enjoy a delicious Vietnamese roll from here too. Options include things like eggplant tempura, lemongrass tofu, and vegan roast chicken.
You can get things other than banh mi here – noodle salads, rice paper rolls, sweets and the like, but one look at what everyone is walking out with tells you all you need to know. The reason you come to Trang Bakery is for the banh mi. And a Vietnamese coffee.
There’s always a queue out the door during peak times, but it moves relatively fast and the wait is worth it. For those who can’t get to Collingwood, Trang Bakery have two other locations – Camberwell and Albert Park.
