MELBOURNE | Up In Smoke is a barbecue, craft beer, and bourbon lover’s delight in Footscray, delivering on what it promises in a fun, vibrant space. Owned by Shayne McCallum, who also owns burger joint 8bit, Up In Smoke (yes the Cheech & Chong reference is intentional) sees a $20,000 double-barrelled Yoder Frontiersman smoker being used to help the kitchen pump out a number of smoked meat dishes.

McCallum has stated that he doesn’t see Up In Smoke as being an ‘authentic’ BBQ spot, but rather a spot that takes the best bits of all the different regional barbecue styles around the US with a bit of Aussie influence. The main thing is that the food tastes good and that customers like it and, after visiting a few times, we can safely say that the food is very good indeed. Sauces and rubs are made on site, and the menu features things like meats, tacos, and sandwiches, and sides like mac & cheese, potato skins and mozzarella sticks.

The ‘Big Tray’ is a must order, and gives you a a good sample of what Up In Smoke does. You get pulled pork, brisket, chicken sausage, chilli mayo slaw, ham hock greens, a milk bun, and pickles. Another must order is the ‘Up In Smoke Sandwich’, which features brisket burnt ends, American cheddar, chilli mayo slaw, and BBQ sauce in a milk bun. It’s salty, umami laden deliciousness. The only thing we’ve tried that we don’t like here is the mac & cheese – it’s just lacking that moreish something that the best mac & cheese has, possibly due to the blend of cheeses being used.

Barbecue is the main reason to come here, but if you’re just looking for a drink and a snack Up In Smoke is well worth a visit too. The 10 beer taps feature a constantly rotating selection of local craft beers, while the focused wine list and extensive selection of quality spirits, especially bourbon, provide more than enough choice for thirsty folk.

Keep an eye out for the Up In Smoke general store, which will be opening soon, and will feature many of Up In Smoke’s sauces, rubs and a range of other products to purchase to take away and use when cooking or barbecuing at home.
