TOKYO | When self-taught chef and wagyu expert Hisato Hamada, and entrepreneur Takafumi Horie launched their private wagyu dinner pop-ups in Tokyo in 2014, they couldn’t have foreseen that within a decade, they’d be helming six restaurants in Japan, and one in Hong Kong.
Wagyumafia is all about offering the world’s best quality wagyu, in unique and innovative ways. A good example of what they do is their signature wagyu katsu sando, considered by many to be the best version of the popular Japanese sandwich, in the world.
In 2018, Hisato launched a burger he’d been perfecting for a while, the “Big Wag”. You can find it on the menu at Wagyumafia Burger, part of the multi-story concept venue, Wagyumafia District. The venue opened in 2021, with several member’s only bars and restaurants. Thankfully, the burger joint downstairs is open to all.
On the menu, you’ll find the Big Wag, along with a few other burgers, the wagyu katsu sando that started it all, truffle fries and sides. There’s house made sauces, and an excellent selection of cocktails and highballs, fun wines from around the world, and Japanese craft beers. There’s also a few vegetarian options, and exceptional coffee.
The Big Wag is the must order item on the menu. It’s a house-made sesame seed buns filled with two 100% single source, pure Ozaki beef (some of the most prized wagyu in the world) patties cooked medium-rare, with house-made sauce, crisp lettuce, fresh pickles and organic American cheddar cheese.
At ¥110,000, the Big Wag ain’t cheap, but it’s justifiably considered one of the best burgers in the world. And it’s so filling that it could conceivably be your only meal of the day. If that’s too daunting for you, there’s the option of the single patty Big Wag Jr. Pair your burger with a serving of the super crispy truffle fries, served with three Wagyumafia house hot sauces.
