SYDNEY | All Purpose (A.P) Bakery isn’t the easiest place to find, but it’s worth seeking out for some of the tastiest baked treats in town.
You need to go to Paramount House Hotel, where you’ll find the excellent Paramount Coffee Project (“PCP”). While you should definitely check out PCP sometime, for A.P Bakery you need to continue through to the rear of the cafe, where you’ll find a lift. Hop in and head to the rooftop. Bypass the hotel gym/rec centre and walk through the door leading to a large deck. It’s here that you’ll find A.P Bakery.
It’s a collaboration between a team who either own, or have worked together, in some of Sydney’s top venues, and the result is fantastic. Summery California inspired vibes, even in the middle of winter, when I visited, and outstanding food and coffee.
Head baker and co-owner Dougal Muffet’s daily baked treats are displayed on a multi-layered racks, and there’s a small but fast moving line for them. It’s things like buttermilk croissants and other viennoiserie, canelés, sourdough baguettes and country loaves, and pies. It’s all made using flour milled daily using the baker’s own American stone mill, from old world grains sourced form local farms, including Muffet’s family farm in Forbes.
In the kitchen, co-owner Mat Lindsay’s team are cooling up an all-day breakfast menu of things like an egg and cheese brioche sandwich, ricotta, honey, olive oil, and fried rosemary toast, and an LPs Quality Meats smoked beef brisket bagel.
Everything can be enjoyed in or to-go. There’s cocktails, wine, beer, and spirits, along with juices, smoothies, and excellent coffee using beans from nearby Reuben Hills. The latter, along with PCP downstairs, is owned by co-owner Russell Beard. ☕
If you’re closer to Newtown, you can also check out the team’s just opened permanent location, just off King Street.
It’s always nice when a place more than lives up to the hype, and A.P Bakery certainly does just that. The fact that I took some friends here a few short hours after my first visit, speaks volumes.
