MELBOURNE | The seeds for Fixation Brewing Co were planted in 2015 when Managing Partner Tom Delmont (then at Mountain Goat) had a chance encounter with two of Stone & Wood’s founders, Jamie Cook and Ross Jurisich, and discussed, amongst other things, the idea of an IPA-only brewery. A short while later, Fixation started and in May 2016 the first batch of their immediately highly regarded Fixation IPA hit shelves on the Eastern States.

For the next few years only a handful of beers were made by Fixation, with the recipes being perfected and brewed at Stone & Wood in Byron Bay. In 2018 the brewery finally found a home on Smith Street, and while the core range beers are still produced up in Byron Bay, ‘the incubator’ as it’s called is where you’ll find all the seasonal and one-off beers being brewed and sold, often exclusively. The name ‘the incubator’ comes from the fact that this site is a space for experimentation and challenging people’s ideas of what an IPA can be.

The space features a 600 litre system with ten taps pouring all kinds of tasty IPAs. For newcomers to the brand, the signature Fixation IPA is a must try. It’s a 6.4% ABV West Coast IPA packed with Mosaic, Citra, Simcoe, and Amarillo hops, and one of the best examples of the style in Australia. The Squish, a 5.9% ABV IPA with Citra, Amarillo and Mosaic hops, adds blood orange and grapefruit for a deliciously juicy, hoppy delight. And then there’s the special brewery only beers which rotate regularly – ask the staff to tell you what’s tasting fresh and exciting at any given time.

For non-beer drinkers, there’s a rotating selection of around five wines put together by a friend of the Fixation guys who knows “a lot more about wine than they do”. Expect wines that are local, interesting, and quality.

Tours aren’t offered, but the space is so small that you’re in amongst the entire brewery, and staff are happy to talk you through it all if you want. There’s also no kitchen on site, but you’re free to order in food, and there’s no shortage of great options on Smith Street.
