MELBOURNE | Honcho Noodle is the new CBD restaurant from Adam Liston (Northern Light) and will be opening in September this year. From today until the opening of Honcho, Liston will be running a pop-up, Honcho Noodle at 1 Bourke Street. It’s a casual space that blends Korean, Japanese and Chinese flavours and influences and provides a teaser of what’s to come when the full Honcho opens.

As the suffix “Noodle” suggests, noodles play a big part at Honcho Noodle, with the one page menu split into “Noodles” and “Not Noodles”. On the noodle front think Kyoto-style hot soba noodles, Chinese-style shaved charcoal duck soup noodles and Japanese udon noodles with spanner crab and dashi butter. Most of the noodle options are new creations but there are also several favourites, like the udon noodles, yakitori, golden egg and the katso sando, that have made their way over from Liston’s former restaurant, Northern Light.

A selection of Japanese beers, spirits, shochu and sake are on offer, along with some Japanese inspired cocktails like the “shochu & tonic”, a Japanese take on the classic G&T created by Honcho’s head bartender Ryan Noreiks.

Northern Light was one of our favourite Melbourne restaurants and we’ve been anticipating Liston’s next move for a few months now. We’ve already visited Honcho Noodle once and left feeling very satisfied, with much of what made the old restaurant popular present. We’re looking forward to Honcho opening in September, which will feature a custom built charcoal grill and a raw bar for sushi and sashimi, but in the meantime we will definitely be back at Honcho Noodle to help us get through the winter.
