MELBOURNE | Named after the Tagalog word for “drinking”, Inuman is a rooftop bar in the CBD by Michael Mabuti, Ralph Libo-On, and John Rivera, and can be found above their contemporary Filipino restaurant, Askal.
It’s an intimate space, with a modern indoor section opening out onto a partially covered outdoor space that looks across the city. Like the restaurant below, Inuman is about blending tradition and innovation – creating new and exciting things that honour and respect tradition.
On the menu, you’ll find reimagined Filipino drinks, classic cocktails with a Filipino twist, and extensive use of Filipino ingredients and flavours. Paeroa Hard nods to New Zealand’s L&P soda (John and Ralph grew up in New Zealand), and blends Starward Honeycomb Whisky, Filipino tapuy rice wine, and lemon.
The Tito Ray, meanwhile is a twist on the Mai Tai that honours Filipino bartender Ray Buhen, who worked at Don the Beachcomber, where tiki drinks were invented. It’s a mix of Estancia Raicilla, durian, and calamansi.
For food, John has put together a menu of snacks that follow the same theme as the drinks. Think duck liver parfait with feijoa jam on toasted youtiao; Lambanog spiked young coconut sorbet; and one of the city’s best snacks, a chicken “skinato” sandwich. The latter sees soft white bread filled with crispy roasted chicken skin, inato sauce, and a salad of scallion, lime leaf, lemongrass, coriander, and red chilli.
