SYDNEY | Manly Spirits Co. is a distillery located north of Manly in Brookvale, that puts a bit of a different spin on the spirits it distills. Its whiskies, gins and vodkas are distilled using sustainable native and marine botanicals, many of which are sourced from the nearby coast. A board on the wall of the distillery’s bar highlights some of the bontanicals used like sea lettuce, pepper leaf, anise myrtle, finger lime, and wattle pollen.
It’s the creation of former Chemical Engineer David Whittaker and his wife designer and marketing guru Vanessa Wilton. We spoke to both of them when we visited and their enthusiasm for what they’re doing at Manly Spirits Co. really shines through. They both took time out to go through a tasting selection of some of the distillery’s offering, and spoke passionately about the ingredients used, and the various reasons for using the different botanicals and processes.
The Terra Firma vodka has an earthy yet clean taste with a sweet orange nose, and rich roasted nutty finish. It’s unlike any vodka we’ve ever tried. Their coastal citrus gin meanwhile, is refreshingly light and citrusy. If you don’t want to try straight spirits, the bar also serves an assortment of cocktails designed to compliment the various spirits. There’s even a G&T flight on offer if you want to see how different gins and garnishes can change the classic cocktail.
For food it’s a choice of cheese boards, charcuterie boards & olive bowls and visitors can order pizza from nearby Mimmo or Sale Pepe restaurants.
