SYDNEY | Monopole Potts Point is the creation of restaurateurs Brent Savage and Nick Hildebrand (Yellow, Cirrus, Bentley) and sees them turn the space formerly home to Sailors Thai into a sleek, dark, low lit bar/restaurant that’s about contemporary Australian share plates and fantastic drinks.

The focus in on quality produce when it comes to the food, with a menu that features the best of what’s in season. Think steak tartare with fried sweet potato skins and dehydrated mushrooms, locally caught rock oysters, and house-made charcuterie using meat like David Blackmore wagyu and Rangers Valley brisket.

The wine list is the big drawcard here (Monopole’s list was voted Sydney’s best in the Good Food Guide 2014) and features over 500 wines from around the world, with familiar varietals of reds and whites sharing the list with newer style, bio-dynamic natural wines. The interesting list is never stagnant, and showcases many new regions, vareitals and styles that you may not have heard of before. This means that there truly is something for everyone, and a large selection available by the glass. Beer drinkers have a selection of macro and craft beers while lovers of cocktails and spirits wont’ be disappointed by the large variety of top shelf options.

All up, Monopole is an example of focusing on the simple things and getting them absolutely right, with a modern and inventive flourish.
