MELBOURNE | The George On Collins is the latest hot spot for the post 9-5 crowd, taking over the basement of the heritage listed George’s Building that housed The Long Room for 12 years. The space has undergone a complete transformation, with owners Simon Jones and Greg Kahan bringing in interior designers Hecker Guthrie to re-imagine the space as an all day bar and eatery.

A large granite bar and lots of high benches and stools grace the middle of the long, space, while booths on either side provide a different option for those who are looking for a sit-down option. Towards the back is more seating and couches, along with a second, smaller bar. Chef Tom Brockbank has created a menu that changes depending on the time of day, starting with breakfast options and finishing the night with bar snacks. We tried a few things at the launch party and liked the variety on offer – the smoked brisket sandwich and Brockbank’s take on the humble mini pie are well worth checking out.

Drinks wise it’s CUB beers on tap, as well as partner brands like Goose Island’s recently launched in Australia Midway IPA. The wine list is where the real focus is here, with sommelier Ainslie Lubbock (ex Attica, The Royal Mail Hotel, Cutler & Co), putting together a sharp list of quality drops from mostly small batch, local winemakers. Cocktails are also worth checking out, the list having been put together by Bad Frankie’s Sebastian Costello.

The Long Room was, excuse the pun, getting a bit long in the tooth, and this timely revamp had made The George On Collins a space well worth considering for those after work drinks.
