MELBOURNE | Hightail is a bar inside Docklands office and retail development Collins Square. Fitting with the development which takes up an entire city block, Hightail is a large bar with space for 950 people, which aims to allow nearby office works to ‘escape’ their office surrounds for something more fun.

The venue has been designed by Techne (Long Chim, Tonka, Lee Ho Fook), and features hanging plants, murals of jungle plants and animals, and is one large space that’s been broken up to create a range of large and smaller spaces. The low lighting and low roof gives Hightail a surprisingly intimacy, and it’s easy to forget that you’re at the side of a food court at the bottom of an office tower.

It’s the brainchild of 100 Burgers Group, the team behind Mr Burger, Belles Hot Chicken, Super Taco and Welcome to Thornbury, and all of those food outlets can be found in the Collins Square food court. Even better, there’s an app called 100 Orders that allows guests to have drinks, and food delivered straight to their table. A sneaky drink and some Belle’s Hot Chicken for lunch? Sounds good to us.

There are 64 taps in the venue, featuring CUB and CUB distributed beers like Carlton Draught, Fat Yak, and Goose Island IPA, while a rotating guest tap will feature a local craft beer from outside the CUB stable (when we visited it was Moon Dog’s Mack Daddy Dark Ale). The bottles veer towards the local and crafty side of things, with brews from the likes of Holgate, Two Birds, Kaiju, and Four Pines. The wine list is mostly Australian, with a few old world drops available too, and the cocktail list features a focused range of signature cocktails. Try the Australian Negroni, which uses Four Pillars Spiced Negroni Gin, Red Okar, and MAiDENii Sweet Vermouth for a distinctly Aussie take on the classic.
