PERTH | Two and a half years in the making, Besk has opened to the public as West Leederville’s new bar/pub/bottle shop. Co-owners Elliot Moore (Mane Liquor) and architect Ben Braham have converted the former printers into a natural light filled 200 capacity venue with polished concrete floors, exposed brick walls, and a high ceiling. A long bar and open kitchen separates the venue into two distinct spaces – on one side is the dining area, and on the other, the bottle shop.
Everything in the bottle shop can be purchased to take away or enjoy on site with a small corkage fee. Given that Moore’s Mane Liquor is one of the best bottle shops in Perth for those seeking unique and crafty beer, wines, and spirits, hope were high that there’d be a similar offering here and that’s exactly what’s happened. No matter your tipple of choice, there’s something for you whether it be accessible or experimental, affordable or expensive, local or international. Think collaboration beers with local breweries like Nowhereman and Feral, and minimal intervention house wines from Margaret River’s Dormilona.
The food at Besk takes a similar angle to the drinks. Head chef Gerrard Mitchell has put together a menu of simple dishes that highlight quality produce from local Western Australian producers. Much of it is cooked on the custom-built JAGRD grill, and a lot is done on site, from partial butchering to baking bread.
There’s grass fed steak and chips, a rotisserie of the day, and beer battered fish and chips, but also things like Exmouth tiger prawns with chilli and miso butter, mango glaze, and blood orange, steak tartare with quali egg and potato chips, and a chicken schnitzel burger with jalapeno slaw, smoked cheddar cheese, and chips. What’s on offer exactly differs daily depending on what ingredients are good and fresh at the time.
As well as collaborating with breweries for one-off tap releases, and doing fantastic drink events (they were one of only two venues in Australia to host Cantillon Zwanze Day 2019), Besk also hosts guest-chef dinners. Some big names slated for later this year include Paul “Yoda” Iskov (Fervor), and Guy Jeffreys (Millbrook).
