TOKYO | Tonkatsu is one of our favourite things to eat, and Hasegawa in Tokyo’s Ryogoku neighborhood is one of the best places in town for it. Ordering a tonkatsu set will get you a piece of tonkatsu, along with rice, miso soup, a pile of cabbage salad, pickles, mustard, wasabi, some salad dressing, and your choice of a spicy or regular tonkatsu sauce. The highest quality ingredients are used, including ‘Hiraboku Sangenton’ pork from Yamagata, resulting in a fried pork cutlet that’s juicy on the inside and crispy, but not oily, on the outside. Of the sauces, the thick, umami rich regular tonkatsu sauce is the way to go.
There are a few options available – different grades and cuts of pork, but we recommend the signature Jou Rosu (high standard pork loin). It’s this way that you get to experience the best that Hiraboku Sangenton has to offer. The lower grades of pork are still very good, and hire (tenderloin) is also tasty, but the fatty rose which melts in your mouth is what all the locals go for, for good reason.
